I still have Explorator,
From
Ile de France, Explorateur has a velvety
texture and fruity flavor.
An excellent triple crème, its rind is less
downy
and thinner than that of the Saint Andre
and more sophisticated
in appearance,
yet its flavor is equally fruity, buttery
and just as
friendly.
Two-week shelf life.
Sold by the piece.
Recommended wines are
Bordeaux.
Pave' Sauvage
Pave' is a paver or brick in French.
This herb covered, "brick" of goat cheese,
is mild and milky, creamy and wonderful.
Chabis Feuille,
a fresh goats cheese from France,
wrapped in a chestnut leaf.
Mild and superbly creamy, very agreeable to all palates.
An excellent cheese to pair with bold red wines.
And Humboldt Fog is back.
Humboldt Fog is a goat milk cheese made by
Cypress Grove Chevre,
of Arcata, CA in Humboldt
County.
It is named for the local ocean fog which rolls in from Humboldt Bay.
Humboldt Fog is a mold
ripened cheese.
It has a central line of edible ash much like Morbier.
There is also an ash covering, and a soft bloomy white rind.
The cheese
ripens from the outside in which will produce
a more pungent runny
shell surrounding the fresh goat cheese center.
This runny shell will
widen as the cheese matures
and is considered the best part of the
cheese by many.
The bloomy mold and ash rind is edible, but is fairly
tasteless.
Get all
of these at the shop.
It is just too hard to show them and keep them at the market.
