Does anyone have suggestions?

Dear Cheese Lady -
Should we start a cheese recipe chain letter - with readers (cheese eaters only should apply) contributing their favorite recipe? Perhaps with their recent purchase???  
 
Some of my Saturday  purchase of Gruyere became dinner in a grilled cheese sandwich with a little colby (is that really cheese?) on Bakehouse Country French - also from the market with a little curry apricot Maille dijon that I bring back from France and a sprinkle of minced sweet Peppadew peppers = MMMMMM !
 
My feed back (at your suggestion) - don't discard the "old creme fraiche" - it gets thicker and developes a deeper flavor - and I ate some that was a month old on a fruit salad of raspberries and Harmony peaches from the farmers market of course that was still quite worthy of consumption -
 
Thank you for your contribution to our farmers market community and making my life as a major cheese nut more complete -
